Love Vegan Soul Recipes
I love starting my day with this Coco Berry Smoothie bowl. It’s naturally sweet and especially delicious thanks to its creamy texture and balance of fruity and chocolate flavors. Plus, it's surprisingly high in fiber and beta carotene thanks to the steamed sweet potatoes that make up the base of this super simple recipe.
INGREDIENTS
1/2 cup steamed sweet potatoes
1 cup frozen mixed berries
1/2 cup frozen cherries
2 Tbsp chia seeds
1 Tbsp cacao powder
1 Tbsp maple syrup
a dash of cinnamon
1/2 cup cashew milk, or plant milk of choice
1 scoop vegan protein or super-food powder of choice (optional)
INSTRUCTIONS
Add all ingredients to a blender and blend for 30-60 seconds until completely smooth. To serve, top with sliced organic strawberries, or berries of choice, and a sprinkling of chia seeds.
