Love Vegan Soul Recipe

A white bowl filled with a coloful salad made with baby greens, sliced peaches, strawberries, yellow bell pepper, red onion, and chopped pecans. Topped with a drizzle of creamy dressing made from peaches and lemon juice.

Crispy on the outside and fluffy inside, these savory potato waffles are packed with warming spices and herbs. Top them with sautéed veggies, creamy avocado, and Cuban black beans for a flavorful, nutrient-rich meal. Perfect for breakfast, brunch, or any time of the day!


Makes 3 potato waffles


INGREDIENTS
  • 2 medium or large russet potatoes, peeled and steamed

  • 1/2 teaspoon ground turmeric

  • 1/2 teaspoon sea salt

  • 1/2 teaspoon red chili flakes

  • 1 teaspoon garlic powder

  • 1 teaspoon dried parsley flakes

  • Cooking oil spray (for waffle iron)


Optional toppings:
  • Lightly sautéed bell peppers and kale

  •  1/2 avocado, sliced

  •  Cherry tomatoes, sliced

  •  Cuban black beans (or beans of your choice)


INSTRUCTIONS
  1. Steam the Potatoes: Peel and steam the russet potatoes until fork-tender (about 7 minutes).

  2. Mash the Potatoes: Once steamed, mash the potatoes in a bowl using a fork (or a potato masher/food processor).

  3. Season the Potatoes: Add the following spices:

    1. 1/2 teaspoon turmeric

    2. 1/2 teaspoon sea salt

    3. 1/2 teaspoon red chili flakes

    4. 1 teaspoon garlic powder

    5. 1 teaspoon dried parsley flakes


    Mix the spices into the mashed potatoes until well combined. If desired, you can add vegan cheese or nutritional yeast for a cheesy flavor.

  4. Form the Waffles: Divide the seasoned mashed potatoes into 3 (or 4) equal portions. Roll each portion into a ball, and then press them into a 1/2-inch thick round using your hands.

  5. Prepare the Waffle Iron: Spray the waffle iron with cooking oil spray (both top and bottom). Place the potato balls into the waffle iron, flatten them out to about 1/2-inch thick, and press them down.

  6. Cook the Waffles: Close the waffle iron and cook until the waffles are golden brown and crispy on the outside (check frequently to avoid overcooking).

  7. Serve: Top the waffles with sautéed vegetables (such as bell peppers and kale), Cuban black beans, sliced avocado, and cherry tomatoes.

  8. Enjoy: Serve immediately and enjoy the combination of crispy waffles with creamy toppings and a variety of textures and flavors.
