Love Vegan Soul Recipe
This vegan Coconut Lime Slaw is a delish and refreshing side dish that's perfect for any occasion. It's made with shredded green and purple cabbage, carrots, edamame, fresh herbs, and tossed in a light and flavorful coconut lime dressing. You're gonna love this slaw!
INGREDIENTS
4 cups shredded green cabbage
4 cups shredded purple cabbage
2 cups shredded carrots
1 cup shelled edamame
1 generous handful cilantro, chopped
1/4 cup vegan mayo
1/4 cup coconut cream
1/2 lime, juiced
1 orange, juiced
1/2 tsp sea salt
1/4 tsp red chili flakes
1-2 Tbsp sweet chili sauce - you can also use ponzu sauce, chili garlic sauce, or sriracha sauce (optional)
1-2 Tbsp agave nectar or coconut sugar (optional)
INSTRUCTIONS
Add all ingredients to a large mixing bowl and mix together until well combined. Allow to chill in the refrigerator for at least an hour before serving. Leftovers can be stored in an air-tight container in the refrigerator for up to a week.
