Creamy Spiced Chia Pudding Bowl

This Spiced Chia Pudding Bowl is the ideal recipe for a simple but special breakfast. It is decadent but not overly sweet, and granola adds the perfect crunch to complement the creamy chia pudding. To top it off, the juicy tartness of sliced strawberries nicely balances the mellow and rich flavors of this chia granola bowl.


  • 1 cup of almond milk

  • 3 Tbsp chia seeds

  • 2 Tbsp of coconut sugar

  • a splash of vanilla extract

  • a dash of ground cinnamon, cardamom, and nutmeg


In a bowl, mix almond milk with chia seeds, coconut sugar, vanilla extract, and all of the spices. Allow to set in the refrigerator to thicken for about at least an hour to achieve the ideal consistency. To serve top with granola and sliced berries, or your desired fruit.


This recipe is versatile and can be customized many ways:

  • Swap chia seeds for flax seeds or hemp seeds.

  • Use orange juice instead of orange segments

  • Use grapefruit instead of oranges or tangerines.

  • Use any combination of berries you prefer instead of strawberries.
