Love Vegan Soul Recipe
This Fruity Summer Salad is vibrant and colorful, featuring some of the summer’s most delicious fruits, peaches and strawberries. Made with baby greens, yellow bell pepper, red onion, chopped pecans, and topped with a drizzle of creamy dressing made from peaches and lemon juice, it’s crunchy, sweet, tangy, and filled with some of the best flavors of the season in every bite.
Makes 2 entree sized salads
SALAD INGREDIENTS
Baby spinach
6-8 sliced strawberries
2 peaches, pitted and sliced
1/4 small thinly sliced red onion
1/2 thinly sliced bell pepper, red, yellow or orange
1/4 cup chopped pecans
DRESSING INGREDIENTS
1 lemon juiced
1 peach, pitted and sliced
2 Tbsp agave nectar
1 Tbsp apple cider vinegar
1/4 tsp salt
A few dashes of black or cayenne pepper
2 Tbsp olive oil
1/4 tsp ground turmeric
INSTRUCTIONS
Add all dressing ingredients to a blender and blend for 30-60 seconds until smooth. Pour into a container and set aside until ready to serve.
Add several generous handfuls of baby spinach or your preferred leafy greens to your serving dishes as a base layer of your salad. Layer with equal portions of the sliced red onions, bell peppers, strawberries, peaches, and chopped pecans.
Top each salad with an ample drizzle of the lemony peach salad dressing and enjoy!
TIPS
Fresh peaches shine in this salad and dressing but frozen or canned peaches can be used as a substitute if fresh options aren't available. Use 1 up or frozen or canned peach slices in place of each fresh peach in the recipe.
