Love Vegan Soul Recipe
This Smoky Chipotle Pumpkin Hummus is the epitome of simple and delicious seasonal eating. These days, smoke is the flavor element that makes most savory and lots of sweet dishes complete in my cooking. It is delivered twice over in the dish thanks to paprika and Chipotle peppers in adobo sauce.
INGREDIENTS
1 – 15 oz can chickpeas, drained and rinsed
½ cup pumpkin puree
¼ cup extra virgin olive oil (optional)
¼ cup tahini
1-2 whole chipotle peppers in adobo sauce
1 Tbsp garlic powder (can be substituted for 3-6 cloves roasted garlic)
1 tsp ground cumin
1 tsp smoked paprika
½ tsp sea salt
½ lemon, juiced
INSTRUCTIONS
Add all ingredients to a blender or food processor and blend until smooth. Scoop into a serving bowl and serve with chips, sliced vegetables, on pita bread, or as a spread on sandwiches and wraps. Can be stored in an air-tight container in the refrigerator for up to a week.
