Love Vegan Soul Recipe
This simple Spicy Jerk Fried Rice is a delicious fusion of Caribbean and Asian flavors. I used day-old rice and peas from the my favorite Jamaican carry-out, but you can also make fresh rice and peas at home. I used jerk seasoning from my favorite brand, but Jamaican curry powder would also add amazing flavors to this fried rice recipe.
INGREDIENTS
1 1/2 cups day old Jamaican rice and peas
1/2 cup shredded cabbage
1 cup mixed vegetables of choice (if frozen, rinse to thaw before cooking)
1 cup sliced mushrooms
2-3 scallions thinly sliced
1/2 tsp Chinese 5 spice or ground allspice
1/2 tsp ground ginger1 tsp garlic powder
4 tsp Tamari sauce, soy sauce, or coconut aminos
1 generous tsp mild jerk seasoning
1-2 Tbsp grapeseed oil
INSTRUCTIONS
Heat a large pan over medium-high heat.
Add grapeseed oil and use a spatula to spread across the surface of the pan until evenly coated.
Add mushrooms, garlic powder and jerk seasoning and saute for about 5-7 minutes until the mushrooms have released most of their moisture.
Add all remaining ingredients and stir fry for another 5-7 minutes until evenly heated through and fragrant. Serve with a big green salad and enjoy!
